Ingredients:
- 1 cup gluten-free all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon of salt
- 1 15 oz can black beans (drained and rinsed)
- 4 eggs
- 3/4 cup cocoa powder
- 3/4 cup Walden Farms Pancake Syrup
- 1/3 cup canola oil
- 1/4 cup Walden Farms Mocha Coffee Creamer
- 1/2 cup sugar-free dark chocolate chips
Preparation:
- Preheat oven to 350°F. Prepare a 9-inch square pan by greasing it and lining it with parchment paper, leaving a little paper overhang; put it aside.
- In a large bowl, combine the dry ingredients: flour, baking powder, baking soda and salt. Set this bowl aside.
- In a blender, combine black beans, eggs, cocoa powder, pancake syrup , oil and cream until smooth. Stir this mixture into the dry ingredients until well combined. Gently fold in the chocolate chips.
- Transfer the dough to the prepared pan, smoothing the top evenly. Bake in the preheated oven for 25 to 35 minutes or until the top is dry and the edges begin to pull away. Let the baked creation cool completely on a wire rack. To unmold it, use the excess parchment paper, then cut it into squares.
